Our beef is 100% Angus. Our bison comes from Colorado and Wyoming. And we serve Red Bird natural chicken which is raised without hormones or antibiotics and fed vegetarian feed. We pride ourselves on our fresh ingredients. We prefer fresh over frozen anytime we can select it. Our salads are renowned for this — we select and hand-cut our lettuce – it’s not just poured out of a bag. Our soups are made fresh daily. We hand prepare locally sourced vegetables and grow our own herbs and garnishes during the summer months. Most items are made from scratch and to order. Dam beers are used in the menu items where it makes sense and we design our food to pair with our beers.
We offer a full-service bar and an interesting wine list. We serve Colorado Craft Spirits — small batch spirits — such as Breckenridge and Colorado Vodka, Breckenridge Bourbon, Leopold Brothers Absinthe, Stranahan’s Bourbon, Vail 10th Mountain Division Rye and Moonshine whiskies and more. Our wines have been selected for their taste, value and for compatibility with our menu items. Our staff can help you pair one with any menu item.
